More than a restaurant
Brocheta Bistro opened in McAllen in 2023. The idea was simple, and it has not moved since: cook Mediterranean food properly, to order, and treat everyone who walks in like they were invited.
Gilbert Colunga spent more than thirty years in hospitality before this — long enough to know what a dining room feels like when the food is rushed and what it feels like when it is not. Brocheta was built to be the second kind of room.
The menu is Mediterranean because that is the cooking he loves: smoke and citrus, herbs that are chopped that morning, hummus that never sat in a tub waiting for someone. Kabobs come off the grill when you order them. Pitas are warmed, not reheated. Nothing is assembled in advance to save two minutes at the pass.
What “Cooking with a Purpose” means
It is not a slogan about ingredients. It is about why the restaurant exists: to be a place in McAllen where a family, a table of coworkers on a Monday, or someone in town for a convention can all eat well and feel looked after. The purpose is the people. The cooking is how we say it.
Lighter eating, without the lecture
Mediterranean cooking makes eating well easy rather than worthy. Grilled proteins instead of fried, olive oil instead of butter, vegetables that are the point of the plate rather than a garnish. A good part of our menu is vegetarian — falafel, hummus, Greek and quinoa salads, spinach-feta roll-ups — and the kitchen is happy to build a plate around whatever you do and do not eat. Ask. Nobody here will make it complicated.

We are locally owned, in Palms Crossing, minutes from the Convention Center. We cook for the Rio Grande Valley every day and for everyone passing through it — and we would rather earn the second visit than win the first.
